Great for brunch: blueberry pancakes

Blueberry pancakesBy now you have probably already realised that blueberries are a staple in my kitchen! I love everything with blueberries in them and so does my boyfriend, so when we do brunch, aside from the bacon and eggs, these delicious little pancakes just have to be there! I can’t even remember where I got the recipe in the first place, but it says it makes 20 pancakes… if so, they are very small! I make mine a good 10 cm in diameter and you’ll get about 8 of those.

Mix 200 g self-raising flour, 1 tsp baking powder and a pinch of salt  in a big bowl. Beat 1 egg with 300 ml milk, make a well in the middle of the flour and add the egg mix. Stir until you get a smooth mix. Add a knob of melted butter and carefully mix in 150 g blueberries.

Bake in a hot pan with a small knob of butter. Add a small ladle of the mix and bake for about 3 min on a medium heat. It will get air bubbles at the top and once it looks just set at the top and it starts to dry a bit on the sides, it’s time to flip it over. The second side doesn’t take as much time, so keep an eye on them as they can burn easily! Serve with more blueberries, maple syrup, golden syrup or sugar. And be careful with ladles and bowls and sticky mixes, I think my kitchen floor got nearly as much of the mix as the pan! Enjoy!
